La Paloma
My humble homage to the one of the most popular tequila-based cocktails in Mexico-Paloma. Very little is known about the history of the classic cocktail. It is believed that it was named after La Paloma (“The Dove”), the popular folk song composed in the early 1860s. The original cocktail was created by the legendary Don Javier Delgado Corona, owner and bartender of La Capilla, in Tequila, Mexico.
LA PALOMA
- 2 oz Tequila Espanita
- 1 oz Grapefruit Juice
- 0.5 oz Lime Juice
- 0.5 oz Cardamom Maple
- 2 dashes Grapefruit Bitters
- 1.5 oz Red Grapefruit Ginger Beer
Garnish: Fresh Grapefruit/Curry Leaf
Place a long shard of ice into a Collins glass.
Add the rest of the ingredients gently one at a time. Top with Ginger Beer and stir gently just to combine the ingredients. Garnish.
